A little while back (around Labor Day 2020!!!), my family and I tried making fluffernutter sandwiches.
What is a fluffernutter sandwich, you ask?
It’s basically a peanut butter and marshmallow sandwich. It was invented in Massachusetts back in World War I and is popular in New England.
I learned about fluffernutters through the Expeditionary Force series by Craig Alanson. The sandwich is a favorite of the main character, Joe Bishop. There are several references made to the sandwich throughout the series and I’d been meaning make them for quite a while. I bought some Marshmallow Fluff, one of the key ingredients, last March. Somehow I forgot about the fluff and recently found it in my pantry. So not wanting to let it go to waste, we had a little fun.
Before I share the details, I have to say that the Expeditionary Force series is one of my favorites over the last several years. I look forward to each of the new releases and eagerly listen to it as quickly as I can. I’m sure the e-books and paperbacks are great, but if I’m being honest, these stories really shine in the audio format read by R.C. Bray. The series begins as a typical military, sci-fi, alien invasion story (not that there is anything wrong with that) but then the books take a twist in a direction that I didn’t expect and with that change, turned into something unexpected and a lot of fun!

Remember, I highly recommend the audio version. The interplay between the main characters is a highlight of the series.
Now, back to the fluffernutters. It’s a very simple recipe.
You’ll need:
1. White Bread. The brand is up to you, I used Artesano bread which is basically extra-thick and fluffy white bread.
2. Marshmallow Fluff. According to Joe Bishop, you must use this version.

3. Creamy Peanut Butter. I used Skippy Natural Creamy… because Skippy is one of the other main characters of the series and that’s what I had available. Although it’s not technically part of the recipe, I think if I make them again I’ll use chunky peanut butter to add a little more texture.
To make a fluffernutter, you just spread the Marshmallow Fluff on one piece of bread. Then the Peanut Butter on another piece. Finally, you place the two together. That’s it, now take a bite!
Here’s what it looks like when it’s done.
Traditional Fluffernutter
Verdict: Light and fluffy. The marshmallow fluff gives an airy quality to the sandwich, and the peanut butter really shines through. Tasty, but not very filling. If this wasn’t a snack, I’d need to eat two full sandwiches to be satisfied. Since we were testing multiple sandwiches each of us ate two of the above pieces, so about half a sandwich.
We weren’t completely satisfied with the traditional, so we experimented a little. We added butter to the outside of the sandwich and placed it in our air fryer for a Grilled Fluffernutter.
Grilled Fluffernutter
Verdict: The crispy butter outside and heated marshmallow fluff and peanut butter made for some warm gooey deliciousness. This version was more substantial than the traditional version, and definitely a step up in terms of texture and flavor. I used my Ninja Foodie Air Fryer/Pressure Cooker Combo, but I think you could get the same result on the stove or even better yet, a panini press, although you must be careful not to compress it too much or you’ll create a mess!
Next up we kicked it up a bit more. We made the Grilled Fluffernutters, but at the very end we sprinkled it with powdered sugar!

Verdict: I think it would dismay Joe Bishop that we strayed from the traditional recipe, but OMG…

This one was decadent. The powdered sugar put it over the top. This was by far my favorite!
Just for fun, we also made S’mores in the air fryer and they turned out great. Easy to make and you get nice, toasty (and puffy) marshmallow!

Overall, we had a lot of fun making fluffernutters. I’m sure that consuming them didn’t do much good for our blood sugar levels, or our waistlines… but it was a holiday weekend and they tasted great.
